While not moles in the classic sense, there are some dishes that use the term in their name. Mole de olla is a stew made from beef and vegetables, which contains guajillo and ancho chili, as well as a number of other ingredients found in moles. History of the mole sauces Two states in Mexico claim to be the origin of mole: Puebla and Oaxaca. The best-known moles are native to these two states, but other regions in Mexico also make various types of mole sauces. A similar version of the story says that monk Fray Pascual invented the dish, again to serve the archbishop of Puebla. In this version, spices were knocked over or blown over into pots in which chicken was cooking. Other versions of the story substitute the viceroy of New Spain, such as Juan de Palafox y Mendoza in place of the archbishop. Modern mole is a mixture of ingredients from North America, Europe, Africa, and Asia making it one of the first intercontinental dishes created in the Americas. Its base, however, is indigenous. Nahuatl speakers had a preparation they called mōlli or chīlmōlli, meaning “chili sauce”. In the book General History of the Things of New Spain, Bernardino de Sahagún says that mollis were used in a number of dishes, including those for fish, game, and vegetables. Theories about the origins of mole have supposed that it was something imposed upon the natives or that it was the product of the baroque artistry of Puebla, but there is not enough evidence for definitive answers. While a vast myriad of mole existed throughout prehispanic Mesoamerica, the Mexica primarily reserved the use of chocolate for beverages. In the writings of Sahagún, there is no mention of it being used to flavor dishes. Most likely what occurred was a gradual modification of the original molli sauce, adding more and different ingredients depending on the location. This diversified the resulting sauces into various types. Ingredients that have been added into moles include nut (such as almonds, peanut, pine nuts), seeds (such as sesame seeds, squash seeds), cilantro, seedless grape, plantain, garlic, onion, cinnamon, and chocolate. However, most versions do not contain cinnamon. What remained the same was the use of chili peppers, especially ancho, pasilla, mulato, and chipotle, and the consistency of the sauce. The true story of how mole developed may never be truly known, as the first recipes did not appear until after the Mexican War of Independence in 1810. The Nahuatl etymology of the name probably indicates a Mesoamerican origin. Preparation and consumption All mole preparations begin with one or more types of chili pepper. The classic moles of Central Mexico and Oaxaca, such as mole poblano and mole negro, include two or more of the following types of chili pepper: ancho, pasilla, mulato and chipotle. Other ingredients can include black pepper, achiote, huaje, cumin, clove, anise, tomato, tomatillo, garlic, sesame seed, dried fruit, herb like hoja santa, and many other ingredients. Mole poblano has an average of 20 ingredients; mole almendrado has an average of 26, and Oaxacan moles can have over 30. Chocolate, if used, is added at the end of cooking. According to Rick Bayless, the ingredients of mole can be grouped into five distinct classes: hot (chili), sour (tomatillo), sweet (fruit and sugar), spice, and thick (seed, nut, tortilla). The ingredients are roasted and ground into a fine powder or paste. This roasting and grinding process is extremely laborious and takes at least a day to accomplish by hand. Oxford University to trial giving AstraZeneca Covid vaccine as a nasal spray with the hope it will trigger a better and faster immune response in the lungs. Oxford university is looking for 30 adults to receive vaccine through nasal spray. Trials could begin next week and are expected to last four months. Trial follows announcements that the university and other researchers are assessing delivering vaccines in non-jab forms. AstraZeneca’s coronavirus vaccine will be administered as a nasal spray as part of a new trial. Oxford University scientists — who developed the jab — have been looking at injection-free ways to dish out the vaccine. It’s thought that nasal sprays may better target immune cells in the lungs, throat and nose, making them even more effective at defending against Covid. Oxford is looking for 30 adults to get the vaccine squirted up their noses as soon as next week. Volunteers will be tracked for four months to see make sure it’s safe as part of the initial trial. If successful, the phase one study will move on and tens or potentially hundreds more adults will be recruited to see if it can ward off the virus as well as a jab. Nasal spray vaccines would be great news for people who have a fear of needles and could alleviate supply issues that have hindered rollouts around the world. This method is already used to give out children’s flu jabs. The university’s study, involving adults over 40, is part of its partnership with AstraZeneca, the Financial Times reported. Professor Sarah Gilbert, one of the lead scientists behind the Oxford university jab, announced last month that her team was working on injection-free ways of delivering the vaccine. Vaccine hesitancy could lead to 20,000 extra coronavirus deaths over the next two years, a study has suggested. Researchers warned that if a significant number of people turn the jab down, it may allow the virus to spread in high numbers when lockdowns are eased, posing a constant threat to the elderly and ill. The gloomy modelling by Imperial College London predicted 305 extra Covid deaths per million people by 2023, the equivalent of 20,130 people in the UK. Other more pessimistic calculations projected even more deaths. Experts warned vaccine hesitancy will lead to flare-ups in cases and hospitalisations which could see lockdown restrictions in place for longer. The study did not specify what constituted as high vaccine hesitancy. But Imperial has been repeatedly criticised for its pessimistic Covid models, which predicted 250,000 deaths in the first wave without further action. So far, uptake in Britain has been far higher than expected, with more than 90 per cent of Britons over the age of 60 having accepted their jab. But officials expect that, as the programme moves to younger, less-vulnerable groups, the turnout rate will drop because young people don’t see the virus as a threat. Government-funded surveys have indicated up to a fifth of people under-30 will turn the vaccines down. Professor Sarah Gilbert told the House of Commons Science and Technology Committee last month that researchers were exploring nasal spray and tablet forms of the vaccine. She said: ‘As you know all the vaccines have been given at the moment as intramuscular injections. ‘That is not necessarily the best way to provide protection against a respiratory virus infection, where we want the immune system to be active in the upper respiratory tract and then in the lower respiratory tract, which is where the virus is causing the infection. ‘We have flu vaccines that are given by nasal spray and this could be a very good approach in the future to use vaccines against coronaviruses.’ Other scientists in the UK began testing a different nasal spray vaccine, known as COVI-VAC, on volunteers at the start of the year. The spray, made by New York-based company Codagenix, contains a genetically modified form of Covid and is being tested on 48 adults in London. The UK Medicines and Healthcare Products Regulatory Agency (MHRA) green-lit the trial after positive safety data in animal studies. COVI-VAC is a type of live attenuated vaccine, meaning trialists will get a genetically-modified version of Covid that is weaker than the real thing but still infectious. Live attenuated vaccines — such as the MMR jab — work by stimulating the immune system in the same way that real disease would, but by relying on viruses unable to cause severe illness. Oxford University’s vaccine is an adenovirus vaccine – which uses a weakened virus that causes the common cold that has been modified not to trigger illness and is not infectious. Meanwhile, Russia’s Gamaleya Research Institute of Epidemiology and Microbiology is also trialing a nasal spray to deliver the country’s Sputnik V vaccine. Instead, he said there may have been ‘technical or human errors’ which led to the crash. Two attempts to dislodge the 1,300ft-long container ship – and reopen the critical global trade route – will be made today after efforts yesterday failed. The Panama-flagged vessel, which is as long as the Empire State building, has been wedged since Tuesday and caused tailbacks of around 280 ships floating in and outside the single-lane Egyptian waterway. High winds were understood to have blown the ship across the narrow canal, that runs between Africa and the Sinai Peninsula and facilitates 12 per cent of international shipping, but Mr Rabie today confirmed this was not the main reason for the crash. A video from Vessel Finder recreating the crash by using the ship’s onboard tracker shows the moment it veered to port before suddenly going hard to starboard and hitting the banks. It ran aground about 3.7 miles north of the southern entrance, near the city of Suez, and forced boats astern to grind to a halt. IAEA Director General Statement on Situation in Ukraine

Ukraine informed the International Atomic Energy Agency (IAEA) that a backup power line between the country’s Zaporizhzhya Nuclear Power Plant (ZNPP) and a nearby thermal power station was deliberately disconnected today in order to extinguish a fire, but the line itself was not damaged. The ZNPP continues to receive the electricity it needs for safety from its sole operating reactor. After the ZNPP’s connection to its last remaining operational 750 kilovolts (kV) line was lost late on Friday, the 330 kV reserve line had been used to deliver electricity from the ZNPP to the grid. Ukraine informed IAEA that this backup line will be reconnected once the fire has been extinguished. One of the ZNPP’s six reactors continues to produce the electricity the plant requires for cooling and other nuclear safety functions. The reactor will be connected to the grid when the 330 kV line is switched on again. Also today, four IAEA experts left the ZNPP as planned after several days of essential nuclear safety, security and safeguards work. Two others are staying to maintain a continuing IAEA presence at the site, enabling the Agency to observe the situation there and provide independent assessments. The six experts arrived at the ZNPP on 1 September as part of a team led by Director General Rafael Mariano Grossi that crossed the frontline to establish the IAEA Support and Assistance Mission to Zaporizhzhya (ISAMZ) at the plant in southern Ukraine. The ZNPP is held by Russian forces since early March, but its Ukrainian staff is continuing to operate the plant. The IAEA experts on the ground have been assessing the physical damage at the ZNPP, determining the functionality of the main and backup nuclear safety and security systems, and evaluating the staff’s working conditions as well as the plant’s current emergency response capacities, among other important activities. Over the past few days, safeguards inspectors have also performed urgent safeguards activities on the site. The plant’s Ukrainian staff told the IAEA experts today that they plan to repair the 750 kV line that went down on Friday but that it would take several days to do so. A secure off-site power supply from the grid and backup power supply systems are essential for ensuring nuclear safety.
